Hair Nets, Gloves, Labelling, Ice Maker Cleaning

Guys -

Our last Health Department Inspection highlighted the following:
  1. Head Covering. You should wear head coverings while working. A baseball cap is fine.
  2. Gloves. Unless you have a cut on your hands, you need not wear gloves. It is more important to clean your hands to avoid cross contamination. If you wear gloves, you still have to keep in mind to avoid cross contamination.
  3. Ice Maker. The Ice Maker needs cleaning. We may as well also clean the sink sanitizer.
  4. Labelling. We have not done so well DATING and LABELLING things once opened from the original container. This can be a real problem. There are markers provided for this purpose.

Label Food

When opening a container or package, please Note the Date it was opened.

If something is removed from its orginal packaging, not only date it, but Label what it is.

Sharpee Markers, bags and containers are currently above the fridge to assist in this effort.

It is a bad thing to have the health department find un-dated, opened food in the fridge or freezer!

First In/First Out - "FIFO"

First in - First Out
An important concept of the Health Department, Food Safety and Quality is "First in/First Out" ("FIFO"). This means, the older food is used before the newer food.

To accomplish FIFO, a sign has been posted on the Freezer. When loading the freezer, please follow the rotation depicted. This is a small change: When taking food out, deliberately take the food as depicted in the rotation. Then, when you have time, rotate food to fill in. This takes a little longer, but is necessary to comply with FIFO.

When Loading the freezer, rotation is also necessary. Move older stuff up in the rotation to make room for newer stuff.

Some of the hamburgers and hotdogs don't fit on the shelves as easily as the bread, so follow the FIFO idea using less shelf space.

The same idea should be applied to fridge food.
